Here you can follow my Food Journal

My goal is to eat healthy foods - nuts, seeds, berries, fruits, veggies, drink lots of water (and since my husband is a Kangen Water associate my beverages, soups, generally anything that uses water is using water from the machine). I am walking (3 or more miles daily with the Leslie Sansone tapes), sometimes I also will do a Slim in Six or Zumba exercise session. As the title of my blog suggests, I will getting the majority of my protein (meats) from the tuna, Salmon and Eggs - though I will be having other fish, chicken and cheese, etc in moderation. Limited processed foods and when eating out goal is to choose the healthiest items from the menu.

Dinner - Spinach Salad...
I've been hungry for a salad all day but we don't have the fixin's in the house, and I hate going to the store just for a salad. so I decided to make a salad using what I had on hand. A can of spinach, some bacon bits, ground pepper, salt, dried garlic, thyme, oregano, parsley, and fresh basil. it's good. I thought about putting shredded cheese on top, but it doesn't need it. It is really good.

Delicous

scrambled eggs made with peach yogurt, eggs, bacon, bell pepper, green onion, celery, basil, sage, rosemary, thyme, fennel, sea salt, ground pepper, shredded cheese. - white grape juice from frozen can made with 9.5 Kangan water.

I used my onion chopper and cut up bell pepper, celery and green onion, put this in the cast iron skillet that was ready with hot EVOO added in about 1/4 cup of peach yogurt and stirred, added in 3 slices of schwans precooked bacon (I would next time cook this seperate and let it get crispy and then crumble it on top), add in two eggs and scramble. season with fresh ground sea salt and fresh ground pepper, dried herbs of sage, fennel, rosemary and thyme, fresh basil leaves. (all of this is from what I had on hand. herbs can all be fresh or dried and any type.

very good!

Dinner invention of sorts:
I was hungry for pizza or pasta but had neither so I compromised with a very simple and inexpensive alternative.

grilled cheese dipped in spaghetti sauce. my makeshift pizza. :>
it was pretty good. I could see a lot of variations by the types of bread, types of cheese, and of course types of spaghetti or marinara sauces. just like the variations on types of pizzas. - I'll have to tell my daughters about this.

Turkey potato corn bread and wildflower honey


turkey is one of those frozen white turkey things that take over two hours to cook. they are okay, but not my fav. The corn and bread is from Schwans. baked poato topped with shredded cheese, wildflower honey bought in Holmes County (Amish country) Ohio. additional items sea salt, fresh ground pepper, fresh basil, dried garlic..

Note: This was really GOOD. I think the basil on the turkey really set it off. That wildflower honey, well it is really good. I never had it before... where is the truck load of it coming to my front door? lol. I hope it is good for me, cause I love it! I'll have to find a supplier of it and get it regularly.

Sunday dinner

not having tuna today, though I should. I am making turkey, potatoes, corn, bread. it is in the oven right now. Takes 2 or more hours to cook. it is that white turkey frozen stuff. Mark keeps buying it. I would rather have a real whole turkey with both the light and dark meat. But oh well. it is still good.

note:
It is sooo good. I was eating some of my dessert first, as I generally do :> and as I held the plate up closer to my face to take a bite, it was as if my senses smelled the fish and all the herbs and stuff and it is like it did a double take, like what is that. It wanted the salmon first. it was that good!

Having a Schwan's snack attack. here are artichoke spinach in bread bowls and mini cinnamon buns.

fainting cause my hubby actually took the offered spoonful of my morning beverage concoction. chai tea,dark cho almond silk, instant coffee, raw sugar and a cinnamon hard candy (that melted of course) made with 9.5 Kangen water. He seemed to like it okay. :> (he doesn't like hot tea or coffee, so for him to try my inventions is a miracle!)

Food Journal

feeling FAT today. those few days of not walking and still eating has caught up with me. I have to do something drastic I guess to get my metabolism back up and running.

Having a mug of herbal raspberry tea made with Kangen water and almond silk and eating a banana.

at 8:29 AM I am walking 3 miles, eating an orange and drinking a glass of 100 percent carrot juice. And one strip of beef jerky (from Wilmot Ohio).

Feel PHAT today!! walking 3 miles and today it is an effort. We went to Snookum's Sat night and I had the salad bar and baked potato, thought I was doing good till I had the bread and honey butter. Yesterday Mark brought me two egg rolls from the china restraunt. I think when I get back from our trip I am going on a daniel fast.

Food Journal

weighed in at 160.0 this morning which means I have lost nearly a pound. Eating all the Tuna, Salmon, eggs, fruits, veggies, seeds, nuts and berries and drinking water, chai tea and juices is really what it is all about.

Tuna Salad on sourdough

Today we had Tuna Salad Sandwiches on Toast.
Tuna Salad was
3 cans of tuna in water, drained
3 hard boiled eggs, chopped
2 Tbs sweet relish
3 Tbs olive oil mayoniaise
organic ground pepper (to taste)
dried basil leaves (to taste)
dried oregano (to taste)
dried parsley (to taste)
garlic salt (to taste)
fresh basil leaves ( four or five or (to taste)
a hand full of saltine crackers crushed.

Mix well and chill.

we put ours on toasted sour dough bread with a slice of american white cheese.

Food Journal

just because I haven't been posting as much lately doesn't mean that I have fallen off the plan. With the exception of having the stomach virus for a couple days last week, I have doing the 3 mile walk, eating plenty of nuts, berries, fruits, veggies and having good meats like tuna, salmon, turkey, lots of salads, ice cream, yogurt and cheese.

Just having been taking pictures and posting but I will try to do that soon.

Eat Smart - That's the main thing. (so ready to plant that garden!!!)
