My goal is to eat healthy foods - nuts, seeds, berries, fruits, veggies, drink lots of water (and since my husband is a Kangen Water associate my beverages, soups, generally anything that uses water is using water from the machine). I am walking (3 or more miles daily with the Leslie Sansone tapes), sometimes I also will do a Slim in Six or Zumba exercise session. As the title of my blog suggests, I will getting the majority of my protein (meats) from the tuna, Salmon and Eggs - though I will be having other fish, chicken and cheese, etc in moderation. Limited processed foods and when eating out goal is to choose the healthiest items from the menu.

other than cooking my bacon too long, my breakfast invention this morning is awesome. I made two stips of schwans bacon in my skillet then made french toast from rye bread dipped in whipped eggs and spinach dip.. the remaining egg mix I scrambled up and then made sandwiches from my french toast scrambled eggs and bacon. served with honey. really good. the spinach dip is that salsa type stuff I just put a couple of spoonfuls in with two eggs, whisked them up and dipped the bread in it both sides. added just a little salt to the left over eggs I scrambled. that's it.

made awesome tuna salad for Thanksgiving and carried some to my neighbor Clara and also took it to my inlaws for our meal there. I cut up peaches, apples, celery and boiled eggs along with the tuna, relish, mustard, herbs, organic pepper, dried cranberries. it was really good. I am still having some nearly every day cause I made so much. but everyone loved it, even chloe and she is a picky eater.

potato soup...

well this isn't tuna/salmon or eggs... so really doesn't belong on my blog. but it is a recipe i want to remember and i don't have another blog that uses recipes. so...

I put brocolli, asparagus, onion, garlic, celery,and fresh greens in my potato soup today. after I had boiled potatoes in their skin, I poured off the water, rinsed the potatoes, peeled them, saved the peelings, diced the potatoes and put them in crock pots that had not been turned on yet. in a skillet I fried the potato skins, some bacon, onions and the celery... added in chopped up veggies.. poured in white tea as a broth, added basil, oregeno, sea salt, organic black pepper. then poured it all in the crockpot with the potatoes. very interesting and very good soup.

Lisa Anne Kelley Peter relishes include pickle relish, cucumber relish, vadilla onion relish... along with chopped olives and mustered. oh yeah it has medium white queso in it too. I really did put everything but the kitchen sink in this... no wonder it is so awesomely good.

yesterday I made tuna salad that is so very good...
1 large can of tuna in water, drained
squirt of relish (about 1 tbls)
squirt of yellow mustard (about 1 or 2 teaspoon)
5 chopped olives with pimento
1 tsp vandilla onion relish (I used mine from Whistle Cafe/Henco's)
1 or 2 tsp of cucumber relish (what I made last summer)
2 hard boiled eggs
1/4 cup white cheese queso (medium)
pinch of organic black pepper
a smidgeon of each of these, rosemary, thyme, basil, oregano, parsley, dried chopped garlic
1/4 cup fresh chopped onion
1/4 cup fresh chopped celery
1/2 cup of fresh chopped tomatoe
1/2 cup (or maybe a little more) of dried cranberries
1/4 cup chopped peanuts

mix well, and serve on toasted multigrain (8 grain) bread.

most of my pics and recipes are on my lisa peter arts and entertainment page on facebook. I have been eating eggs/tuna or salmon pretty regularly and eating nuts and berries and fruits and veggies and taking my Shaklee vit C and drinking Kangen 9.5 in my green tea and coffee, etc. been walking 3 - 4 miles per day with Leslie Sanson DVD also. today I am eating tuna salad that is just tuna, boiled eggs , parsley, basil, fennel, rosemary and thyme and oregano and a little EVOO. kind of dry so I mixed it on my plate with a little medium queso dip. pretty good though I probably wouldn't suggest mixing it together in the bowl and storing it that way.

put some of the tuna salad from yesterday into a flour tortilla... - kind of plain tasting and cold tortilla's have got to be next of kin to cardboard... so I ended up placing it in the microwave just long enough to soften it some. - it wasn't my best invention, but I can see that if I would have made fresh tortilla's or warmed these store bought ones on the griddle and then made roll ups probably adding some cheese or salsa, would have been fine. I am really liking the vandila onion relish in with the tuna... very different.

no pics today, cause - well once you roll up the tortilla it looks just like a rolled up tortilla... lol. nothing interesting there. - I could have cut it in rounds and stuck in a toothpick. that would be how to serve it with company. but just me, I mean, why bother. :>

semi homemade tuna salad

1 small can of tuna in water/ drained. 4 hard boiled eggs diced, about 4 tbsp of relish and about 1/4 cup mustard, then add in about 1 tbsp of vadilla onion relish (mine was from whistle stop cafe at Henco's in Selmer). season with basil, parsley, fresh ground black pepper and oregano. very very good.

diet has been put on hold...

bad me, sad me. so fat and miserable... but - see, there is a beginning to an excuse. a sad excuse. Hubby and I went and celebrated our 28th wedding anniversary. not just on the 23rd (the actual date).. no, we did go to Snookum's for that, but then on the 24th we went to Corinth MS and ate at the China King Buffet, then on the 25th we had breakfast at the Pickwick Inn, another buffet, then for supper on the 25th we had a Pzone at Pizza Hut. on the 26th we had the family pack at Taco bell.... it goes on and on and on. - I really want to get back on track. I did walk my 3 miles today. after 4 days of not walking. - yes, so very fat and so very miserable. I asked my husband if he would love me if I got to 200 pounds, not that I intend to get even close to that, and he said "of course, you love me at 200 pounds don't you?".. then we laughed because he is closer to 250 or even more. - we both are a far cry from the 120 pound me and the 155 pound him of our wedding day. I wish I could say it was due to my good cooking... but... how much of my cooking was involved in the scenerio above. yeah, we eat out wayyyyy too much. I didn't even mention the ice cream cone he had bought for me on the morning of the 25th. we were taking back the rental car and he stopped at dollar general and bought me a snicker drumstick cone. bought him one too. oh and the wild berry large shake from Wendy's that afternoon when he was on his way to the doctor's office to get his foot checked out. - see, I can't lose weight with HIM. but perhaps he will listen to me and us both go on a diet. we need too. and I bought more salmon and rice from Schwan's so we should be able to start eating healthy and balanced meals again.

Salmon Panini


my delicious lunch, grilled salmon burgers (from Schwan's) on thin wheat buns (walmart), roasted corn (baked in the oven with the tusks on, just removed some of the silk), cooked peaches (made on the stove with real butter, sugar and cinnamon, didn't add water or liquid just the peach natural juice). grilled veggies from the farmers market.. bell pepper, banana pepper, squash, cucumber, tomato. used white cheese slices (from walmart) on the salmon, sea salt, fresh ground pepper, EVOO, and dried parsley and dried basil. - very good....

Salmon filet grilled on the george foreman grill, wild rice from Ada's that I cooked on the stove using butter and Kangen water and herbs and salt and pepper. the cranberry sauce was canned, and the lettuce was just grilled for a few minutes. The bread was precooked frozen from Schwan's that i had to put in a 375 degree oven (while still fronzen) for 15 minutes. to drink we had Boatman's carrot juice. for dessert, not shown, a Schwan's orange sherbet push up.

eating habits

well it has been over a week since my eating habits have changed back to eating healthy. No weight loss, though, I think it looks like I have lost some. Tummy seems not as big. but anyway, I know these things take time. We ate out at Los Portales yesterday, but I was pleased that I ate grilled vegetables, had beans on flour tortillas. good choice, I think and water with lemon to drink. then at home I ate nuts and dried fruit and a schwans frozen fruit bar. so I know the fruit and nuts have lots of calories, but still healthy food choices. I am expecting the weight to start coming off any time soon. Gonna go walk my three miles, and drink my green tea chai made with Kangen 9.5 and had a banana already and some carrot juice.

Had a bean burrito with shredded cheese and some peace lowfat yogurt for lunch.

had yogurt this morning and some juice. Not losing weight yet like I would like too, but it does take time, and normally for me once it starts coming off it comes off quick. So, if I just keep eating right it will work out.
Was reading a magazine last night and was pleased to be able to show my husband an article about fighting disease with foods like Tuna, Salmon and Eggs. Sept 2010 Ladies Home Journal page 125. Disease Fighters, researchers suggest that vitamin D promotes immune function and may help prevent serious diseases such as multiple sclerosis, says Nancy L. Cohen, Ph.D. professor of nutrition at the University of Massachusetts Amherst. Pick up: Eggs, Tuna, Salmon.

Lunch tuna

I stuck to the plan very well yesterday, only eating healthy items and not overdoing it. I had an egg omelet probably later in the day than I should have,but it probably was under 300 calories. a candy bar is about the same and this was so much more filling and better for me.

this morning, I had a quick glass of orange juice and my shaklee vit C before heading off to LaVon's to set up my booth. then I came back home and had a glass of grape juice and some figs. getting ready to teach two music lessons and then see what things I can get done around the house.

After fasting a few days for Summer and only eating enough for strength - that being salads, nuts, berries and drinking lots of water... Sunday I did have some guacomole and flour tortillas, but that again was for strength. Monday, Memorial day, we were invited to my inlaws for dinner, but I took my own schwan's salmon patty and was very good on my food choices. I made my own blackberry tea that morning for breakfast from blackberries I found in my yard and used honey in place of sugar to sweeten. It was kind of bitter, but I didn't break down and use the bad stuff. This morning I had one egg cooked in olive oil and a glass of juice made with Kangen water. Walked my three miles. I figuted since I detoxed during my 3 day fast I need to just use this opportunity to get back on my eating right and eating well and get back on track to proper exercise as well. - Believing God for a miracle for my friend Summer and I pray for her everyday, as I also did this morning during my 3 mile walk away the pound trek. Summer will get healed and I will be the new old me. Healthy, wealthy and wise and we both will have a wonderful Testimony to share.

Summer Maples - update

my friend and music lesson student Summer Maples is in the Intensive Care Unit, Critical care at Laboner hospital in Memphis. She had a brain stroke while they were doing surgery removing tumors from her brain. She lays there in a coma and they cannot talk to her or touch her or anything for 72 hours.They are waiting for the swelling to go down and start healing itself. She cannot be stimulated in anyway. I have fasted completely off of food yesterday for her, drinking only water, but this morning I was so weak and so I am now eating a few seeds and nuts and raisins and had a little cheese along with the water. I feel bad that I had to eat, but only for strength. I am still believing God for a miracle for Summer.

extreme diet begins today

I have been on and off of diets all year... would start off with a bang, just to fail. well.. I am to the point that if I do not do something drastic then I will never change. so with the help of God I am going on a fast. I need to fast anyway because of some serious needs in the lives of some of my students, and I know we are not supposed to mix dieting with fasting, but as I fast today for Summer Maples surgery, I also plan on shocking my body into a purging mode that I can rid myself of bad habits and get out of the binging mode. My body is a temple of the Holy Ghost and I have abused it with too much pampering of satisfying the taste buds and comfort foods. Well... I already know I am supposed to eat Tuna Salmon and Eggs, nuts, fruits and veggies and drink water and pure juices. but I have been eating processed foods, candy, cake, etc.... I have broken down my temple and for that have gained so much weight, been suffering from back pains, very out of shape and just flat out miserable. I am trusting God to help me use good wisdom and to not cave in to temptation. Tonight is the awards ceremony and I know there will be food there. If I really have my mind made up to fast, then I will stay away from it. I will need willpower. In Jesus' Name!

Tuna/potato scallop

for dinner at Homecomeing at Hopewell today I made a crockpot dish of scalloped potatoes and tuna. I used 2 boxes of scalloped potatoes and put those dry in the crock pot. On the stove I put the two packages of cheese, a stick of real butter, 3 cups of water and one cup of milk and brought to a boil, added some sea salt, organic black pepper, a package of instant mashed potatoes (loaded potato) to thicken it. added this to the crock pot. cut up some green onion, celery, added dried herbs including parsley, oregano, sage, fennel, thyme, garlic, some evoo, and a large can of drained tuna and set the crock pot on high, let it cook for about two hours stirring occasionally. at the church I set it to low and allowed it to keep cooking. - it was very good. the variations could be limitless.
